Do I need to say whether I handle permits?
Yes, and prominently. For the customer that is the uncomfortable part of the project, and saying you handle it heads off the doubt that sends them to someone else.
Why is listing kitchens, bathrooms and floors not enough?
Because the customer is not picking a service, they are trying to picture their own house finished. What decides it is seeing complete rooms, and a list shows nothing.
